揚げ餅の五目あんかけ

正月の主食だった餅も、松の内を過ぎて肩身が狭くなってくる時期
餅はカビが生えやすいので早く食べたい
冷凍庫に保存してもいいけど場所をとる…

ぜんざいなどに入れるというのが一般的ですが、こんな食べ方はいかがでしょうか?

Ankake_mochi

材料:豚肉・モンゴウイカのゲソ・エビ・白菜・ニンジン・ピーマン・しいたけ・たけのこ(冷蔵庫にあるもの適当でOKです)
1.野菜は同じくらいのサイズに切っておく
2.ゲソとエビは厚さ1センチ~0.5センチにスライス
3.中華鍋にサラダオイルを熱し、豚肉を入れる
4.続けてゲソとエビを入れ、日本酒を振ってかき混ぜるように炒める
5.7割方火が通ったら野菜を入れてかき混ぜる
6.オイスターソースで味を調えます
7.続けて、鶏がらスープ(市販の顆粒のものを湯で溶いたものでOK)を入れ、沸騰したらいったん火を止める
8.水溶き片栗粉を入れて混ぜたらもう一度火にかける
9.煮立ったら、サラダ油で揚げた餅にかけて出来上がり

【五目あんかけ】ですが、早い話が【八宝菜】です。これ一つ覚えたら、【中華丼】【皿うどん】【あんかけ焼きそば】等、レパートリーが一気に増えますな(^_^;;;
具は豚肉さえあればあとは何でもいいです。冷蔵庫の余りモノ処理のつもりで
餅は2~3センチ位に切って素揚げにして下さい。カリッとするくらいまで揚げるほうがおいしいと思います。餅が固くなっていると切るときに力が要るので、ケガをしないように注意してください。包丁の腹をまな板と平行にして、体重をかけるようにすると、比較的簡単に切れると思います。
