牛スジ豆腐＆煮込みうどん

つかの間の夏休みに入りました

今日は部屋の片付けと洗車
明日は友人と昼食
明後日は、夕方に少しだけ仕事がありまして芦屋まで行きます
明々後日は友人と宴会

友人に東海地方出身者が何人かいるからというワケでもありませんが、八丁味噌を使った料理を好んで食します
別に、『ドラゴンズ食うたろ』なんて考えているワケではありません

その中でも特に好きなのが、牛スジの味噌煮込み

１．牛スジ肉を熱湯でサッと茹でて、アクと余分な脂を落とす
２．脂を落とした牛スジ・土しょうが・コンニャクを鍋に入れ、水をたっぷり注ぎ茹でる。沸騰したら八丁味噌（今回は肉300グラムほどに対して玉杓にスジ切り1杯ほど使用）を入れ、肉が柔らかくなるまで煮込む
３．肉が柔らかくなって味がついたら、豆腐を入れて一煮立ちさせて出来上がり

ビールもいいですが、焼酎のロックをちびちび飲みながら頂くのもよいです

で、少し残しておいた汁と肉でうどんを煮込んで【スジ煮込みうどん】も頂きます

食欲の落ちる夏ですが、サッパリしたおかずよりも、コテコテもんをガツガツ食べて体力をつけようというのが基本的な考え方です
